Why should anyone care about flavor?
Flavor is your body’s guide to eating delicious, nutrient-rich meats, vegetables, and fruits and avoiding those that lack richness of flavors and nutrients. Over many years, my research group studied how feedback from cells and organ systems alters liking for the flavors of foods as a function of nutrient richness and nutritional needs. Nothing is more important for manifesting the wisdom of your body. That’s why I couldn’t be more enthusiastic and supportive of the work Sherry is doing to awaken people to the importance of flavor. As She notes insightfully, “Flavor is the remedy for boring food (that lacks nutritional richness). Flavor is the remedy for your health (through the wisdom of your body). Flavor is the remedy for the planet (through growing nutrient-rich foods that nourish soil, plants, and animals including we humans).

From Soil to Senses: Why Flavor Matters
Flavor is more than preference—it’s a reflection of our food’s nutritive status.

Oh my goodness,
today's experience has been out of this world.
